Marinated Grilled Vegetables

Makes 3 servings: Counts towards 2 cups vegetables (1/3 cup restricted vegetables)

 

INGREDIENTS

 1½ cup Zucchini, sliced ½ inch
 1 cup Yellow Squash, sliced ½ inch
 1½ cup Mushrooms, quartered
 1 cup Broccoli, bites sized
 1 cup Onion, 1 inch cubes
 ¼ cup Coconut aminos
 2 teaspoons Garlic Powder
 Black Pepper, to taste

 

DIRECTIONS

Heat the grill to 400ºF or medium high and place the sliced vegetables in a resealable bag or shallow dish.

In a small dish combine together the coconut aminos, garlic powder and black pepper. Pour over the vegetables and let them sit for 15 minutes to 1 hour.

Remove the vegetables from the bag and carefully place them on the grill (use a grill basket for the small pieces) to cook for 1-2 minutes per side, or until cooked to desired temperature. Remove and enjoy.
