Marinated Baked Tofu (Vegan)

Preheat the oven to 475ºF and line a baking sheet with parchment paper.
Prepare the tofu by slicing it in half horizontally so there are two thin pieces of tofu. Place the halves on several paper towels or a linen cloth and wrap with more towels and place a heavy pan on top for 10 minutes.
Combine all of the remaining ingredients in a small bowl and set aside.
After 10 minutes place the tofu on the parchment lined tray and place in the oven for 10 minutes to remove extra moisture.
Remove the tofu from the oven and drizzle with half the sauce. Place the tofu back in the oven for 10 more minutes.
Repeat step 5 again.
Remove the tofu from the oven after a total of 30 minutes and slice or dice.
* Enjoy this tofu on its own, on a salad, with cauliflower rice or however.
