Lemony Kale Salad

INGREDIENTS
2½ cups Kale, washed and dried with stems removed
1 Small Shallot, minced
1½ cups Red Bell Pepper, seeded and diced
4 tablespoons Olive Oil
Juice of 1 Lemon
¼ teaspoon Dried Thyme
¼ teaspoon Sea Salt
¼ teaspoon Ground Black Pepper

Chop the kale into bite-size pieces; toss together with the shallot, red bell pepper, olive oil, lemon juice and thyme; season with salt and pepper. Allow salad to sit and marinate for a little bit before serving.
