Lemon Pesto Shrimp Salad

Combine all of the ingredients for the lemon pesto sauce into a food processor and process until it becomes a thick sauce.
Coat shrimp in 1 tablespoon of pesto sauce.
Heat a pan over medium heat and add the shrimp, cooking until all the way pink.
While the shrimp is cooking, combine the arugula, spinach, tomatoes, and cucumber in a large serving bowl.
Once the shrimp are cooked all the way through, add them to your salad and drizzle 1 tablespoon Lemon Pesto Sauce over the top.
