3 cups Leeks, tops and bottoms cut off
1 cup Mushrooms, sliced
2 tablespoons Olive Oil
1/8 teaspoon Salt
Black Pepper, to taste

Simmer the leeks in water until tender; drain and slice.

In a frying pan, heat the olive oil and sauté the leeks and mushrooms; season with the salt and pepper and cook for 2 to 3 minutes.
