Line a crock pot with banana leaves, shiny side up.
Cut the pork into 1½ inch cubes; add to a large bowl along with the sea salt and tamari. Toss until all the pieces of meat are evenly coated.
Stack 2 large chard leaves on top of one another; place 2 to 3 chunks of the seasoned pork in the center and wrap into a bundle and place in the crockpot.
Repeat until all the pork is in bundles; cover the pork bundles with additional banana leaves, shiny side down.
Pour the water over the bundles and cook on low for 8 hours.
