Preheat the oven to warm or as low as the oven allows. Line a baking sheet with parchment paper.
Place the mushrooms in a large bowl and add the remaining ingredients apart from the olive oil; mix well.
Using your hands, pick up a portion of the mixture and roll into 2 inch balls.
Heat the olive oil in a saucepan over medium heat. Add a few meatballs at a time to the pan and sear for 2 to 3 minutes per side. Once the meatballs are browned, place them on the prepared baking sheet and squeeze the tops of each with fresh lemon juice. Place in the oven and keep warm until all meatballs are done.
