Preheat the oven to 425°F. While that preheats, coarsely chop the kale into bite-size pieces and wash and slice the mushrooms.
Wrap the garlic bulb in aluminum foil and place in the oven for 40 minutes; remove and allow to cool.
In a skillet, sauté mushrooms in a small amount of water on medium-high heat until cooked, about 5-7 minutes.
Add the kale and cook, stirring frequently until the greens are a bright green and tender, around 5 minutes. When most of the water has evaporated from your pan, squeeze in the roasted garlic. Serve by itself or over cauliflower rice!
