Italian Roasted Garlic Cauliflower
Makes 2 Servings: Counts towards 2 cups Vegetables, 2 tablespoons Olive Oil
INGREDIENTS
3 cups Cauliflower, sliced
1 cup White Onion, sliced
1 tablespoon Dried Parsley
1 tablespoon Dried Oregano
4 Cloves of Garlic, minced
4 tablespoons Olive Oil
Sea Salt, to taste
Black Pepper, to taste
DIRECTIONS

Preheat the oven to 425°F.

Spread the cauliflower and onion pieces in an even layer on a baking sheet.

In a small bowl, combine the olive oil, spices and garlic and whisk; brush onto the cauliflower and onion slices. Roast in the oven for 25 to 30 minutes, until brown.
