Italian Herb Bruschetta Chicken

Italian Herb Bruschetta Chicken

Make 2 Servings: Counts towards 1 – 4oz serving of meat, 1 tablespoon of oil, ¾ cup vegetables, ¾ cup restricted vegetables

 

INGREDIENTS

 2 -4oz boneless skinless Chicken Breasts
 1 cup Tomato, diced
 ½ cup Onion, diced
 4 tablespoons Basil, fresh
 2 tablespoons Walden Farms Balsamic Vinaigrette
 2 tablespoon Olive Oil
 Sea Salt, to taste
 Pepper, to taste

 

DIRECTIONS

Heat a pan over medium high heat and add the oil.

Prepare the chicken breasts by dusting them with salt and pepper on both sides. Then place them in the pan “skin” side down.

Sear the chicken on each side, about 2-4 minutes per side.

While the chicken is cooking slice the basil into thin strips using a sharp knife.

Once the chicken is flipped add the onions, tomato and basil to the pan and allow everything to simmer together until the chicken is cooked through to 165ºF.

Place some of the tomato and onion sauce on top of the chicken and drizzle the Walden Farms Dressing over the top. Serve with zoodles, cauliflower rice, or a side salad.
