RECIPE SUMMARY
Hot and Sour Soup
Makes 4 Servings: Counts towards ½ cup Vegetables, 1 tablespoon Oil
INGREDIENTS
1 tablespoon Garlic, minced
2 tablespoons Olive Oil
8 cups Water
1 stalk Lemongrass
¼ cup Cilantro, chopped
1 cup Mushrooms, sliced
¼ cup Green Onions, chopped
2 tablespoons Tamari
1 teaspoon Thai Red Curry Paste
2 teaspoon Tamarind Paste
2 tablespoons Red Wine Vinegar
½ teaspoon Chili Powder
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
¼ teaspoon Red Pepper Flakes
6 Drops of Stevia
Sea Salt, to taste
Black Pepper, to taste
DIRECTIONS

In a large pot heat 2 tablespoons of oil over medium heat. Add in garlic and cook for 1 minute or until fragrant.

Pour in 8 cups of water and bring to a boil.

Add in the rest of the ingredients and bring back to a boil. Reduce heat to a simmer and cook for 20 minutes until all the flavors combine.
