Hollandaise Sauce

Place a small pot of hot water on the stove and bring to a boil; reduce to medium heat and bring to a low boil. Place a rolled towel around the rim of the pot to place a mixing bowl on top. (The towel is used to stabilize the mixing bowl).
In a mixing bowl, place the egg yolk and whisk; set the bowl over the pot and slowly incorporate oil while whisking. Pay close attention to consistency and temperature control. The egg will cook if not careful.
When the consistency of sauce is similar to sour cream, add in lemon juice and spices.
*Can garnish with fresh parsley and be used for other dishes of desire.
