Herb Stuffed Mushrooms
Makes 4 Servings: Counts towards ½ cup Vegetables, ½ tablespoon Oil

Rinse the mushrooms under cold water, pat dry and remove the stems.
In a bowl, mix together the minced garlic, salt and pepper, and dried herbs to make a paste-like texture but leave some herbs aside. Add in the lemon juice, olive oil, and fresh parsley; stir. Add the mushrooms in and let marinate for 20 minutes.
Preheat the oven to 400°F.
Remove the mushrooms from the marinade and arrange in a baking dish, stemless side up. Spoon the leftover marinade on top of the mushrooms and finish by sprinkling the remaining dried herbs on top. Bake for 25 to 30 minutes.
