Hawaiian Slaw

Makes 2 Servings: Counts towards 1 cup Vegetables, ½ tablespoon Oil

 

INGREDIENTS

 1 cup Red Cabbage, shredded
 1 cup Green Cabbage, shredded
 ¼ cup Walden Farms Apricot Fruit Spread
 3 Scallions, sliced
 1 tablespoon Ginger Root, grated
 3 tablespoons Rice Wine Vinegar
 1 tablespoon Sesame Oil
 1 tablespoon Tamari
 ½ Lime, juiced
 Red Pepper Flakes, to taste

 

DIRECTIONS

Combine the cabbages, apricot fruit spread, and scallions in a large bowl and set aside.

Whisk the remaining ingredients together in a small bowl, and pour over the slaw; toss to coat.

Cover and set in the refrigerator for at least 30 minutes before serving
