Hawaiian Cauliflower Casserole

Hawaiian Cauliflower Casserole

INGREDIENTS

 2 cups Cauliflower Rice
 2 Eggs, beaten
 2 tablespoons Walden Farms Apricot Fruit Spread
 ½ cup Red Onion, chopped
 4 oz Isernio’s Italian Chicken Sausage, pre-cooked and chopped
 1 tablespoon Olive Oil
 Italian Seasoning, to taste
 Garlic Powder, to taste
 Ground Chili Pepper, to taste
 Chives, for garnish

 

DIRECTIONS

Preheat the oven to 375°F.

In a large mixing bowl, combine all the ingredients.

Grease a shallow baking dish and pour in the cauliflower mixture; bake for 20 to 25 minutes, until the casserole is browned on top.
