Grilled Veggies

Makes 2 servings: Each serving counts towards 2 cups of vegetables (½ cup restricted vegetables), 1 tablespoon of oil

 

INGREDIENTS

 ½ cup Zucchini, ½ inch rounds
 ½ cup Yellow Squash, ½ inch rounds
 1 cup Asparagus, 2 inch pieces
 1 cup Mushrooms, halved
 1 cup Bell Pepper, 2 inch pieces
 ¼ cup Coconut Aminos
 1 teaspoon Garlic Powder
 1 teaspoon Onion Powder
 ½ teaspoon Sea Salt
 ½ teaspoon Black Pepper
 ¼ cup Avocado Oil

 

DIRECTIONS

Heat the grill to medium high heat.

Combine the coconut aminos, garlic powder, onion powder, sea salt, and black pepper in a small bowl, then add the avocado oil.

Place all the sliced vegetables in a bowl or a sealable bag and pour half the coconut aminos mix over the top. Let sit for 30 minutes.

Place the marinated vegetables in a grill basket and place it on the grill for 8-15 minutes depending on size and doneness preference. Shake or stir the basket every few minutes to ensure even cooking.

Remove the vegetables from the grill and drizzle with remaining coconut aminos mix.
