Grilled Tofu and Garlic Mushrooms

Another Delicious 30/10 Recipe

RECIPE SUMMARY

 

Makes 2 servings: Each serving counts towards 1 serving Protein, 1½ cups Vegetables, 1½ tablespoons Oil

 

 INGREDIENTS

 

 2 personal serving Tofu
 2 tablespoons Garlic, minced
 3 tablespoons Olive Oil
 3 cups Mushrooms, sliced
 1 Lemon Wedge (optional)
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Press tofu until water is expelled.

Heat a grill pan over medium heat. Lightly brush half the olive oil over the tofu. Sprinkle the tofu with salt and cook for 2 minutes per side, or until desired degree of doneness, remove from pan and set aside.

In the same pan, combine remaining oil with mushrooms and toss with garlic. Cook for 6-8 minutes.

Once done, spritz lemon over the mushrooms if desired.

Serve tofu with the mushrooms and enjoy!
