Greek Vegetable Salad
Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil
INGREDIENTS
1 cup Tomatoes, chopped
2 cups Cucumber, chopped
½ cup Sweet Pepper (Color of Choice), chopped
½ cup Red Onion, chopped
1½ teaspoons Fresh Thyme, snipped
1 teaspoon Fresh Oregano, snipped
2 tablespoons Walden Farms Balsamic Vinegar
2 tablespoons Olive Oil
Leaf Lettuce
DIRECTIONS

In a large bowl combine tomatoes, cucumber, sweet pepper, red onion, thyme and oregano.

In a small bowl, combine balsamic vinegar and olive oil; whisk together. Pour over vegetables and gently toss to coat.

If desired, line a serving bowl with the lettuce and spoon in vegetable mixture.
