Ginger Lime Asian Slaw

Makes 1 Serving: Counts towards 1½ cups Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 ½ cup Green Cabbage, thinly sliced
 ½ cup Red Cabbage, thinly sliced
 ¼ cup Jicama, grated
 ½ teaspoon Sea Salt
 1 tablespoon Olive Oil
 1 teaspoon Ground Ginger
 ¼ cup White Onion, minced
 1½ tablespoons Rice Vinegar
 Juice of 1 Lime
 1 Packet Stevia

 

DIRECTIONS

Combine the cabbage, jicama, sea salt and lime in a large bowl.

In a medium skillet, lightly cook the minced onion in 1 tablespoon oil and add ground ginger powder.

In a separate bowl, mix the rice vinegar, lime juice, and packet of stevia. Add in the cooked onions and whisk together. Pour over the slaw and refrigerate for 1 hour before serving.
