Makes 2 Servings: Counts towards ¾ cup Vegetables, 1 Protein Packet, 2 tablespoons Oil

 

INGREDIENTS

30/10 Products
 2 30/10 Tomato Soup Packets (Cream of tomato or Tomato)
Grocery List
 ½ cup Tomatoes
 ½ Jalapeño
 ½ cup cucumber
 ½ cup Red Bell Pepper
 ¼ cup Onion
 2 Cloves of Garlic
 1 Squeeze of Lime Juice
 ¼ cup Fresh Basil
 ¼ cup Olive Oil
 1 tablespoon Anchovy Paste (or two anchovies)
 2 tablespoons Red Wine Vinegar
 1 teaspoon Cumin
 1 teaspoon Oregano
 ½ teaspoon Cayenne Pepper
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Combine the soup packets with 6 oz. of hot water and stir to combine; set in the fridge to cool.

Place all the ingredients in a food processor and blend to desired consistency.
