Garlic & Herb Stuffed Mushrooms
Makes 4 Servings: Counts towards 1 cups Vegetables, ½ tablespoon Oil

Preheat the oven to 400°F.Garnish with mint leaves, if you choose.
Rinse the mushrooms, pat dry and remove the stems.
In a small bowl, mix together the garlic, salt, pepper, and herbs, making a paste like texture; leave some herbs to the side.
Add the lemon juice, olive oil and parsley to the mixture and stir; add in the mushrooms and stir around to cover and let marinate for 20 minutes.
In a baking dish, arrange the mushrooms and spoon the leftover marinade on top. Bake for 25 to 30 minutes.
