Garlic Herb Fauxtatoes
Makes 3 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil

Preheat the oven to 350ºF.
Slice the top of the garlic head off and coat with 1 tablespoon of avocado oil, then wrap it in foil. Place on a baking sheet and roast for 20-30 minute or until the cloves are soft.
Once the garlic is roasted remove it from the oven and set aside 5-6 cloves, freeze the rest for later use.
Add all the remaining ingredients to a food processor or blender and pulse until smooth. Be careful not to over blend.
