In a skillet over medium-high heat, whisk together the almond milk, vanilla shake pudding packet, cinnamon and nutmeg; reduce heat to low.
In a small bowl, whisk together the egg yolks. Continue whisking while adding in two tablespoons of the hot pudding mixture, tempering the eggs; slowly drizzle the warmed egg yolks back into the custard, whisking constantly.
Transfer mixture into a bowl and chill for 10 to 15 minutes.
Garnish with mint leaves, if you choose.
