Fish and Chips

Makes 2 servings: Counts towards 1 serving of protein, 1 cup vegetables, 1 tablespoon Oil

 

INGREDIENTS

Fish
 2 personal servings of Tilapia filets
 1 teaspoon Cumin
 1 teaspoon Chili Powder
 1 teaspoon Coriander
 Sea Salt to taste
 Black Pepper to taste
 1 tablespoon Avocado Oil
Chips
 1 medium Zucchini (about 2 cups)
 1 tablespoon Avocado Oil
 ½ teaspoon Sea Salt
 ½ teaspoon Paprika

 

DIRECTIONS

Pre heat oven to 200ºF.

Slice Zucchini thin using a mandolin or sharp knife, lay the zucchini out on two paper towels and dust with salt. Allow the zucchini to sit for 20 minutes then blot with paper towels to remove the moisture. In a small bowl combine sea salt, avocado oil and paprika then using a basting brush coat both sides of the zucchini. Place the zucchini on a parchment line baking sheet.

Place the zucchini in the 200ºF oven and bake for 2- 2½ hours flipping the zucchini rounds after 1 hour. Keep an eye on the zucchini as they cook into the 2nd hour and remove any rounds that are already brown and crispy.

For the fish, combine the cumin, chili powder, coriander, sea salt and black pepper.

Heat a pan over medium heat and coat the tilapia with the spice blend. Add the oil to the pan and gently place tilapia in the pan. Allow the tilapia to cook for 3 minutes on 1 side then flip it and cook for another 2 minutes or until the tilapia is cooked through.
