INGREDIENTS

 

 2 Cups Cucumber, seeded and peeled, diced
 1½ Cup Radishes, halved and thinly sliced
 ¼ Cup Fresh Mint Leaves, thinly sliced
 ¼ Tablespoon Red Onion, minced
 2 Tablespoons Extra Virgin Olive Oil
 2 Tablespoons Apple Cider Vinegar
 ¼ Cup Non-fat Feta Cheese, crumbled
 Sea Salt, to taste
 Black Pepper, to taste

Combine cucumber, radishes, mint, onion, oil and vinegar in a large mixing bowl. Gently toss in the feta cheese and season with salt and pepper.
