Heat the olive oil in a pan over medium heat; add the onions and sauté for 2 minutes. Add in the garlic and cumin and continue to sauté for another 2 minutes, then transfer to a food processor.
Puree the onions and garlic along with the tomatoes and chipotle seasoning. Pour the puree into a small sauce pan and bring to a boil on medium high heat for 2 minutes; reduce heat and simmer, seasoning with salt and pepper.
