Egg White Veggie Bites
Makes 6 Servings: Counts towards 2 Egg Whites, Less than ¼ cup of Vegetables
INGREDIENTS
½ cup Onion, diced
½ cup Red Pepper, diced
Handful of Spinach, shredded
Olive Oil Cooking Spray
12 Egg Whites
Sea Salt, to taste
Black Pepper, to taste
DIRECTIONS

Preheat the oven to 350ºF. Spray a muffin pan with olive oil so it lightly coats the bottom on each.

Add the veggies and 2 egg whites to each tin. Sprinkle it with salt and pepper.

Bake for about 15 to 20 minutes, let cool for 10 minutes.
