Egg White Omelet with Vegetables

Makes 1 Serving: Counts towards 1 cup of Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 ½ cup Egg Whites
 1 cup Spinach
 ¼ cup Peppers
 ¼ cup Mushrooms
 ¼ cup Onions
 ¼ cup Tomatoes
 1 tablespoon Olive Oil

 

DIRECTIONS

In a skillet, heat the oil on medium heat and sauté all vegetables.

Add the egg whites to the pan with the vegetables and cook for 5 minutes, flip and cook for the remaining 3 minutes until the eggs are done.
