Preheat the oven to 400°F.
Zest the lime until you have about 2 teaspoons of zest. Quarter the lime.
In a large bowl, combine cauliflower, curry powder and olive oil and toss to coat. Add in the lime zest and squeeze in the juice of 1 quarter of lime; season with salt.
Transfer the cauliflower to a baking sheet and roast until the edges turn golden brown, about 12 minutes.
Finish by squeezing a little extra lime juice over the top.
