Curried Shrimp Zoodles

Curried Shrimp Zoodles (time: 15 minutes)

Makes 2 servings: Counts towards 6oz protein, 2 cups vegetables, ½ tablespoon Oil

 

INGREDIENTS

 1 tablespoon Avocado Oil
 1 clove of Garlic, minced
 1 tablespoon Ginger, grated
 1 lb Shrimp, deveined and deshelled
 2 tablespoons Thai Kitchen Gluten Free Red Curry Paste
 ¼ cup Unsweetened Coconut Milk
 1 Lime, Juiced
 4 cups Zucchini, Spiralized
 Sea Salt to Taste

 

DIRECTIONS

Heat a large pan over medium high heat. Add in the oil, ginger and garlic, sauté until fragrant. Add in the shrimp and saute until the shrimp is pink (1-3 minutes).

Stir in the Thai Red Curry Paste, coconut milk, and lime, taste and adjust seasonings. Bring to a boil then add the zucchini cook for another minute then remove and serve.
