Cucumber, Radish and Green Pepper Salad

Makes 1 Serving: Each serving counts toward 2 cups Vegetables (½ cup restricted vegetables), 1 tablespoon Oil

 

 

INGREDIENTS

 

 1 cup Cucumber
 1 Scallion
 ½ cup Green Bell Pepper
 ½ cup Radishes
 1 tablespoon Olive Oil
 3 tablespoons Vinegar
 3 tablespoons Fresh Dill, chopped
 ½ teaspoon Dried Basil
 ½ teaspoon Garlic Powder
 ½ teaspoon Onion Powder
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Cut the cucumber, bell pepper and radishes into strips. Mince the scallion. Place in a large bowl.

In a separate bowl, combine the olive oil, vinegar, dill, and spices to make the dressing. Mix well.

Pour dressing over vegetables and mix. Chill 30 minutes before serving.
