Cut the cucumber in half lengthwise, and remove the seeds. Cut a small strip off the bottom of one of the cut halves to make a base, so it will not fall over. Dice the other half into ¼ inch pieces.
In a bowl, combine the diced cucumber with the feta cheese parsley, dill, salt and pepper; spread mixture into the middle of the cucumber boat and slice into bite size pieces. Enjoy!
