Crockpot Mediterranean Roast

Crockpot Mediterranean Roast

Makes 3 to 4 Servings: Counts towards 1 Serving Meat, ½ cup Vegetables

 

INGREDIENTS

 2 lbs. Boneless Chuck Pot Roast
 1 tablespoon Olive Oil
 ½ cup Onion, roughly chopped
 1 Can Diced Tomatoes
 1 tablespoon White Vinegar
 2 teaspoons Dried Herbes de Provence
 2 teaspoons Garlic, minced
 1 teaspoon Dried Basil
 1 teaspoon Dried Oregano
 1 teaspoon Black Pepper
 1 teaspoon Sea Salt
 ½ teaspoon Onion Powder
 2 tablespoons Reduced Fat Feta Cheese (Optional)

 

DIRECTIONS

First pour the oil into the crockpot; using a basting brush, evenly distribute the oil on the bottom of the pot.

Add the onions to the pot and place the meat on top.

In a small bowl, combine the spices with the diced tomatoes; pour mixture over the meat and set the crockpot on low for 7 to 8 hours.

When done, portion out the meat and top with feta, if desired.
