Crispy Cucumber with Blackened Shrimp

INGREDIENTS

 1 cup Cucumber, peeled and sliced
 2 tablespoons Olive Oil
 1 tablespoon Fresh Lime Juice
 1½ teaspoon Salt
 1½ teaspoon Pepper
 2 tablespoons Fresh Cilantro, chopped
 2 Personal Servings Shrimp
 2 teaspoons Paprika
 2 teaspoons Garlic Powder
 1 teaspoon Ground Cumin
 1 teaspoon Dried Thyme
 1 teaspoon Dried Oregano
 ¼ teaspoon Cayenne Pepper
 ¼ teaspoon Chili Powder

 

DIRECTIONS

In a bowl, combine the cucumbers with 1 tablespoon of the olive oil, lime juice, ½ teaspoon salt and ½ teaspoon of pepper; refrigerate until ready to use.

Coat the shrimp in olive oil and in a separate small bowl, combine the paprika, garlic powder, cumin, salt, pepper, thyme, oregano, cayenne and chili powders; toss the shrimp in the spice mix til completely covered.

Heat the remaining tablespoon of olive oil on medium high heat in a large skillet; without overcrowding, place the shrimp in the hot skillet and sear on both sides for about 1.5 minutes. When done, move to a plate.

Take the cucumbers out of the fridge and lay flat on a tray; layer on the cilantro and shrimp. Enjoy!
