Coconut Curry Chicken

INGREDIENTS

 1 Personal Serving Chicken, chopped
 1 tablespoon Olive Oil
 ½ tablespoon Curry Powder
 ½ Cup Onion, sliced
 1 Clove of Garlic, minced
 ½ cup Unsweetened Coconut Milk
 1/3 cup Tomato, diced
 1 Packet of Stevia
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Season the chicken with salt and pepper.

In a bowl, combine the curry powder and the olive oil. In a skillet, heat the curry oil over medium high heat for 1 minute; add in the garlic and onions and cook for 1 minute, then add in the chicken and stir until thoroughly coated. Reduce the heat to medium and cook until the chicken is thoroughly cooked through.

Add in the coconut milk, tomatoes, and stevia into the pan, cover, and let simmer for 30 to 40 minutes.
