In a large skillet, melt the coconut oil over medium heat and swirl to coat the bottom of the pan. When hot, add the onion and cook, stirring until translucent, about 2 to 3 minutes.
Add the cauliflower and coconut milk to the pan and mix thoroughly; cover and steam until the cauliflower is tender, about 10 minutes, scraping the brown bits from the bottom of the pan and mixing into the cauliflower. If desired, stir in the cilantro.
