Cobb Salad

Cobb Salad

Makes 1 Serving: Counts towards 1 Serving Meat (minus 1 oz), 1 Egg, 1 cup Vegetables, 2 tablespoons Oil

 

INGREDIENTS

 1 Personal Serving Turkey Breast, minus 1 oz
 1 Hard Boiled Egg, sliced
 ¼ cup Tomato, diced
 ¼ cup Green Bell Pepper, sliced
 ¼ cup Red Onion, sliced
 ¼ cup Cucumber, diced
 2 cups Romaine Lettuce, chopped
 Sea Salt, to taste
 Black Pepper, to taste
 1 tablespoon Olive Oil
Ranch Dressing
 3 tablespoons Chives
 4 teaspoons Dill
 4 teaspoons Garlic
 4 teaspoons Onion Powder
 4 tablespoons Parsley
 1 Egg Yolk
 ¼ tablespoon Olive Oil
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Preheat the oven to 400°F.

In a food processor, add all the Ranch Dressing ingredients except for the oil. Slowly drizzle in the oil until smooth; set aside.

Brush the outside of the turkey breast with olive oil and season with salt and pepper. Roast the turkey breast in the oven for 10 to 15 minutes or until internal temp reaches 165°F.

While the turkey roasts, toss your chopped veggies in a bowl. Once done, let the turkey rest for 3 to 4 minutes and then slice to desired size. Place turkey over salad with the hardboiled egg.

Drizzle 1 to 2 tablespoons ranch dressing over the top and toss if desired.
