Heat the avocado oil in a frying pan over medium heat.
In a bowl, combine 1 packet of stevia with ¼ teaspoon of cinnamon and set aside.
In a separate bowl, combine the pancake packet, water, stevia packet, and pinch of cinnamon; stir to combine.
Drop a spoonful of the batter into the hot oil and fry until golden brown, about a minute and a half per side. Remove the churro bites from the oil and drain on a paper towel.
When cool enough to touch, roll the churros into the seasoning.
