Chipotle Lime Steak Skewers

Chipotle Lime Steak Skewers

Makes 4 Servings: Counts towards 1 Serving Meat, 1½ cups Vegetables

 

INGREDIENTS

 1½ lbs. Cube Steak
 5 Limes, juiced
 ½ tablespoon Sea Salt
 ½ tablespoon Cumin
 1 tablespoon Chipotle Pepper
 ¼ cup Cilantro
 1 Clove of Garlic
 2 cups Red Bell Pepper, chopped
 2 cups Green Bell Pepper, chopped
 1 cup Red Onion, chopped
 1 cup Mushrooms, whole

 

DIRECTIONS

Juice the limes into a small bowl, adding in the sea salt, cumin, chipotle pepper, cilantro and garlic to make a marinade. Transfer to a Ziploc bag and add the steak; set aside to marinate.

While the meat marinates, chop the vegetables into large pieces; when finished marinating, alternate the vegetables and steak until skewers are full.

Heat a grill on medium heat and add the skewers; cook for 5 to 7 minutes per side until steak is cooked through. When finished, squeeze a lime over the top and serve.
