Chipotle Cauliflower Salad
Makes 2 servings: Each serving counts towards 2 cups of vegetables (¾ cup restricted vegetables)

Bring a large pot of water to a boil, and set the oven to 375ºF.
Add the cauliflower florets, simmer the florets for 2-5 minutes or until the florets are slightly soft.
Drain the cauliflower florets and place them on a sheet tray, and place the tray in the oven for 5 minutes.
Remove the florets from the oven and let them cool.
In a large bowl combine the remaining ingredients, add the cauliflower and stir, season with sea salt and black pepper as needed.
