Place the vegetables on the bottom of a 6 qt. slow cooker; add the chicken broth, Italian seasoning, bay leaf, tomatoes, salt and pepper.
Season the chicken with salt and pepper and add to the slow cooker.
Cover and set the crockpot on low for 8 to 10 hours or on high for 5 to 6 hours, until the vegetables are tender and the chicken is cooked through.
Shred the chicken.
