in Peanut Sauce

INGREDIENTS

Chicken Satay
 1 tablespoon Italian Seasoning
 1¾ teaspoon Curry Powder
 2 ½ teaspoons Minced Garlic
 ½ teaspoon Cinnamon, ground
 1½ tablespoons Sea Salt
 ¾ teaspoons Black Pepper
 ½ teaspoon Paprika
 2 tablespoons Coconut Oil
 2 Chicken Breasts, butterflied
 2 tablespoons Fresh Parsley, roughly chopped
Peanut Sauce
 ½ cup Walden Farms Peanut Whipped Peanut Spread
 ¼ cup Tamari
 1 tablespoon Walden Farms Pancake Syrup
 1 tablespoon Red Pepper Flakes
 1 teaspoon Thai Kitchen Gluten Free Red Curry Paste

 

DIRECTIONS

In a small dish, combine all the spices for the chicken satay.

Rub the chicken with oil and the spice mixture.

Heat a pan to medium high and place the chicken in the pan. Cook for 3 to 4 minutes per side, until cooked through. Remove the chicken from the pan and cut into bite size pieces.

In a microwavable dish, combine all the ingredients for the peanut sauce. Microwave in 15 second intervals, stirring in between until well combined and it becomes a smooth consistency. Serve with peanut sauce.
