Heat the olive oil in a wide and shallow pan over medium heat; circle the pan to coat.
Add the chicken soup packet and whisk into the oil; slowly add the water and chicken stock. Continue whisking and adding water until the mixture is smooth, bubbling and to gravy consistency. Add in the herbs and lemon juice; season with salt and pepper, to taste.
