Chicken Fajita Lettuce Wraps

INGREDIENTS

 4 Personal Servings Chicken Breasts
 2 cups Red Peppers, sliced
 1 cup Onion, sliced
 1 Clove of Garlic, minced
 1 teaspoon Dried Oregano
 ½ teaspoons Smoked Paprika
 ½ teaspoon Cayenne Pepper
 Pinch of Cumin
 4 tablespoons Lime Juice
 Sea Salt, to taste
 Black Pepper, to taste
 Large Leaves of Lettuce

 

DIRECTIONS

Slice the chicken breasts into thin strips.

In a small bowl, combine half the olive oil, lime oregano, cayenne pepper, smoked paprika, garlic, salt and pepper; add the strips of chicken and toss to coat. Let marinate for 30 minutes.

Heat 1 tablespoon of the olive oil in a large skillet over medium high heat. Add in the onion and red pepper and cook for 5 to 7 minutes, or until crisp tender; remove form the skillet and set aside.

In the same skillet, heat the remaining tablespoon of oil. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, or until no longer pink. Add the cooked peppers and onion back into the skillet and stir, cooking for 1 more minute. Season with salt and pepper, to taste and spoon mixture into lettuce leaves.
