Chicken and “Rice” Casserole

Preheat the oven to 375°F and spray a 9 x 13 pan with oil.
Dice chicken breasts into 1-inch cubes and season with sea salt and pepper, set aside.
In a large bowl, combine the remaining ingredients.
Add the chicken cubes and stir to combine then pour into the 9 X13 pan.
Bake in the oven for 45 minutes or until the chicken has reached an internal temperature of 165°F.
Remove from the oven and cool for 10 minutes before serving.
