Cauliflower Pork Fried Rice

Heat the coconut oil in a wok or large pan over medium high heat; season the pork with salt and pepper and cook on both sides until done. Remove from the pan and set aside.
Add the garlic and the onions to the pan and cook until fragrant; add in the ginger and cubed zucchini and cook for 2 to 3 minutes. Add the rest of the vegetables except for the cauliflower and green onions. Cook for another 2 to 3 minutes and toss in the cooked pork and tamari; season with salt and pepper.
Push the ingredients to the outside edges of the pan, making a hole; crack the egg in the middle of the pan and stir fry with the rest of the ingredients. Add in the cauliflower and spinach leaves, gently mixing. Top with the sliced green onions.
