Cauliflower Popcorn

Cauliflower Popcorn

Makes 4 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 8 cups Cauliflower, broken into popcorn-size florets
 ¼ cup Oil (Coconut or Olive)
 1 teaspoon Dried Marjoram
 1 teaspoon Dried Thyme
 ½ teaspoon Granulated Onion or Garlic
 Several Pinches of Cayenne Pepper
 Sea Salt & Pepper, to taste

 

DIRECTIONS

Preheat the oven to 450°F. Line two baking sheets with parchment paper.

Combine the cauliflower and oil in a medium bowl and toss; add the marjoram, thyme, granulated onion and cayenne and sprinkle with salt and pepper. Mix well.

Spread the cauliflower evenly on the baking sheets. Roast for about 30 minutes until the cauliflower is well browned and a little crispy; stir halfway through.

All to cool a few minutes before serving.
