Preheat the oven to 375°F.
Quarter and roast tomatoes for 10 minutes.
In a separate bowl, combine the cauliflower rice, green onion, flat leaf parsley, and mint.
Remove the tomatoes from the oven and blend into a paste; carefully pour paste over cauliflower mixture and toss together thoroughly.
Add the lemon juice, stevia, and olive oil and combine.
Add salt and pepper to taste.
*To cook packaged frozen cauliflower rice follow the package instructions, then squeeze out excess water by placing the cauliflower in a tea towel and squeezing.
**To cook unfrozen cauliflower rice, place 1 cup of cauliflower rice in a bowl with 2 tablespoons of water, place the bowl in the microwave on high for 2 minutes. Remove and stir. Place back in the microwave and cook for another 2 minutes. Continue to stir and microwave the cauliflower rice for a total of twelve minutes. Then squeeze out excess water by placing the cauliflower in a tea towel and squeezing.
