Cauliflower Fried Rice
Makes 3 Servings: Counts towards 2 cups Vegetables, ¾ tablespoons Oil and 1 oz. Meat

Chop up cauliflower into small florets and process in a food processor until the cauliflower becomes a small crumble.
Heat the sesame oil in a large pan over medium high heat.
Add mushrooms, kale, red bell pepper, and garlic and sauté for 5 minutes until the vegetables are tender.
Add in the cauliflower rice, combine, and cook for an additional 5 minutes.
Whisk together the two eggs in a small bowl and pour over the top of the cauliflower mixture in the pan.
Stir until fully incorporated and the eggs are cooked all the way.
Lastly add in the ground ginger and soy sauce and mix together.
Season with salt and pepper to your desired liking and enjoy!
