Cauliflower Crust Pizza

INGREDIENTS

Pizza
 3 Oz Isernio’s Italian Chicken Sausage
 ¼ cup Green Bell Peppers, sliced
 ¼ cup Red Onion, diced
 ¼ cup Mushrooms, sliced
 ¼ cup Tomatoes, sliced
 1 cup Spinach, chopped
 4 tablespoons Walden Farms Tomato Basil Sauce
 4 tablespoons Reduced Fat Feta Cheese
Crust
 2 cups Riced Cauliflower
 2 Egg Whites
 2 Cloves of Garlic, diced
 2 tablespoons Reduced Fat Feta Cheese
 ½ teaspoon Sea Salt
 ¼ teaspoon Pepper
 1 tablespoon Mrs. Dash Italian Seasoning
 1½ tablespoons Olive Oil

 

DIRECTIONS

Preheat the oven to 350°F.

Line a loaf pan with parchment paper and set aside.

In a small pan, heat ½ tablespoon of the olive oil on low heat and add garlic; cook for no more than 1 minute and set aside.

In a microwave safe bowl, heat the cauliflower rice for 8 minutes. When done, squeeze the water out of the cauliflower with a cheesecloth. The water will be very hot, so be careful. Place the cauliflower back into the bowl and add in the egg whites, seasonings, feta cheese and garlic with the oil it was cooked in and mix with your hands, making dough.

Spray an 8 inch cake pan with nonstick cooking spray and spread the dough around the bottom; bake for 25 to 30 minutes or until golden brown and set aside when done.

Heat the remaining 1 tablespoon of olive oil in a pan and cook the chicken sausage. Once cooked through, drain the excess oil and set aside.

Once the crust is complete, spread the tomato basil sauce over the top and layer with the vegetables, feta cheese and chicken sausage. Move to a baking sheet and bake for 5 to 10 minutes. Enjoy!
